Keto Chocolate Mug Cake





  • 3 tbsp almond flour
  • 1 tbsp unsweetened cocoa powder
  • 1/4 tsp baking powder
  • 1 egg (medium size)
  • 1 tbsp unsalted butter (can be substitued with coconut oil for a dairy free version)
  • 1/8 tsp salt
  • 1 tbsp erythritol sweetener

  1. Mix the almond flour, unsweetened cocoa powder, baking powder, salt, and the erythritol sweetener together in a small bowl or a mug.
  2. Slowly add the melted butter and beaten egg to the mix and use a fork to whisk them together.
  3.  Lightly grease a microwave safe mug or a ramekin and then pour the batter into it. There should be at least an inch of empty space from the top so the cake can rise.
  4. Microwave on HIGH for 1 minute, test it, if it needs more time put it in for 10 more seconds. It should be cooked and not runny in the middle.
  5. Serve with some fresh cream and sugar-free dark chocolate chips.

HOMEMADE RASPBERRY ZINGER POKE CAKE

INGREDIENTS 1 box (18.25oz.) white cake mix Ingredients listed on box to prepare cake 1 box (3 oz.) raspberry flavored gelatin (Jello) 2 cups hot water 1 jar (10 oz.) raspberry preserves 1 tub (8 oz.) Cool Whip, thawed 1 bag (7 oz.) shredded coconut INSTRUCTIONS Bake the cake according to package directions using a 9x13-in. baking pan. After the cake has baked, remove from the oven and allow to cool for 30 minutes. Using the handle end of a wooden spoon or a meat fork, poke cake every inch or so with the handle of wooden spoon or tines of meat fork halfway into the cake. There is no set number of holes, but you want plenty of places to fill. Mix the raspberry gelatin with 2 cups of hot water until dissolved. Ingredients For the dough: ¾ cup warm milk (whole milk or 2% preferred) (110 degrees F) 2 ¼ teaspoons quick rise or active yeast (1/4-ounce package yeast) ¼ cup granulated sugar 1 egg plus 1 egg yolk, at room temperature ¼ cup unsalted butter, melted 3 cups bread flour, plus more for dusting 3/4 teaspoon salt For the filling: 2/3 cup dark brown sugar (light brown sugar also works) 1 ½ tablespoons ground cinnamon ¼ cup unsalted butter, softened For the cream cheese frosting: 4 oz cream cheese, softened 3 tablespoons unsalted butter, softened ¾ cup powdered sugar ½ teaspoon vanilla extract Instructions Warm milk to around 110 degrees F.
